HAVE YOURSELF A PERFECT BREAKFAST SALAD

Meals that are super fast and easy peasy to make are best for the breakfast. If you would like to escape same old cereal or ham'n'eggs, the perfect alternative is - a salad. There are tons of salad recipes, basically whatever can go in one, depending on one's taste. This one is my favourite for an easy spring Sunday morning breakfast, when I have a bit more time to spend in the kitchen than in the rest of the week.
It doesn't have a certain name because I prepared it one morning with the stuff I found in my fridge, but it was so tasty and delicious that I am making it now at least once a week.

But we can name it - AVOCADO EGG SALAD - just because of the two main ingridients that go in it.

It's a must try!



AVOCADO EGG SALAD - QUICK RECIPE
(serves 1 if main / serves 2 if side dish)

INGRIDIENTS:
- 3 hard boiled eggs
- 1/2 avocado
- 2 green onions
- 1 spoon olive oil - salt & pepper

WHAT TO DO:
- peel of the eggs and cut them in pieces. Cut the half of avocado in small cubes. Chop the green onions. Throw it all into a bowl. Add one spoon of olive oil and salt and pepper to taste. Mix well. (If you like a stronger taste, add one spoon of freshly squeezed lemon juice!) And you're done :)
